						Goat Milk Rice Pudding with Rose Water and Cardamom

Ingredients
| 1.5 cups | Whole or low-fat goat milk, fresh or made from powder | 
| ⅓ cup | Short-grain rice, sushi or arborio | 
| ½ tsp | Cardamom | 
| 2 tbsp | Sugar | 
| 1 tsp | Rose water | 
| Apple sause to taste | 
Preparation

Combine goat milk, rice, cardamom, and sugar in a medium-sized bowl. On medium heat, bring to a boil. Let simmer for 20-25 minutes, stirring gently and constantly, like a risotto. Once the rice is done and the pudding has thickened, turn off the heat. Stir in rose water.
Distribute pudding into two bowls and add apple sauce to taste.
