Goat Milk Eggnog

Ingredients
4 Servings| 4 cup | Whole or Low Fat Goat Milk |
| 4 | Eggs |
| ⅓ cup | Maple syrup or cane sugar |
| 3 tbsp | Vanilla rum* |
| ½ tsp | Nutmeg, fresh or dried |
Preparation

Mix the eggs and sweetener in sauce pan with whisk, then add milk and whisk until mixed. Put on medium low heat and stir occasionally as it slowly cooks. Keep checking temperature until it reaches 165-170 degrees Fahrenheit, it shouldn't boil or simmer. Take off heat and let sit 5 minutes, then add vanilla, rum, and nutmeg.
* You can make your own vanilla rum by soaking 3 beans in rum for a month. If not using, substitute 1 1/2 tbsp vanilla and 2 tbsp rum.
